I’m inspired by what Xalisko Cocina Mexicana represents—the history, the tradition, and the soul of our culture. Corn is at the heart of it all, a symbol of who we are, and through my cocktails, I honor that heritage while bringing it into a modern expression.
Jesus Cruz Velazquez is a Certified Sommelier with over 20 years of experience in fine dining and restaurant management and currently serves as the General Manager at Xalisko Cocina Mexicana, where he leads with a passion for hospitality, wine, and elevated Mexican cuisine.
Jesus has held leadership roles at some of Houston’s respected restaurants, including Backstreet Cafe and Armando’s Mexican Restaurant as General Manager, as well as Assistant Manager at Toulouse French Bistro, developing strong beverage programs as Bar Manager at La Griglia and Dolce Vita.
With a deep commitment to service excellence and wine education, Jesus continues to elevate the guest experience and contribute to the growth of Houston’s culinary scene.
